It is done! In December, we fulfilled a dream and opened MIKROKOSMOS. THE RESTAURANT the first restaurant in Germany that not only offers insects on the daily menu, but also sets milestones in the field of sustainable future food.
For five years now, Nicol has been making edible insects respectable in Germany with her “Mikrokosmos Berlin” project. Cooking classes, caterings, pop-up events and her presence at street food markets have so far ensured that more and more people are considering the tiny creepy-crawlies as an alternative source of protein. Together with chef and partner Diego Castro, they now finally can create stunning dishes in a cosy and intimate atmosphere in Berlin-Kreuzberg.
But we do not only offer dishes with insects. Our menu consists of sustainable food that helps to protect our environment, because we believe that this is the food of the future. Therefore, 90% of our menu consists of vegan and vegetarian dishes. However, a few dishes contain animal products, including of course edible insects – approved in Europe, carefully selected by us and bred exclusively for human consumption by certified farmers.
All dishes are made from organic and seasonal products by local farmers (or hunters) in Berlin and Brandenburg. Because what counts in the future is the efficiency of each product. That means to care for short delivery routes and sustainable production.
