Microcosmo was founded in 2017 with the aim of exploring alternative protein sources, particularly edible insects – the first insects legally approved in the European Union. The focus was on how these new foods would be accepted in Western culture. Through a series of events and happenings, the potential of this sustainable food source was brought to life.

Now, Nicol and Diego have combined their communication and culinary expertise into a restaurant that explores sustainable gastronomy from multiple perspectives.
